Ingredients

  • 450 g leftover roasted vegetables, drained and chopped
  • 300 g eggs without shells
  • 80 ml milk
  • 130 g shredded mozzarella
  • 70 g chopped onion
  • 15 ml olive oil
  • 2 g ground black pepper

Method

  1. Preheat oven to 190 °C (375 °F).
  2. Heat olive oil in an oven-safe skillet; cook onion over medium heat for 3 minutes.
  3. Add leftover vegetables and cook 3 minutes until excess moisture evaporates.
  4. Whisk eggs, milk, cheese and pepper; pour over vegetables.
  5. Bake 19 minutes until set and golden, reaching 74 °C (165 °F) at the center.
  6. Rest 5 minutes and cut into 4 slices.

Presentation

Serve 1 generous wedge per person while the cheese is soft.

Suggested pairing

Use cooked, well-drained broccoli, carrots or zucchini. Without leftovers, roast 450 g vegetables until lightly browned and cool.

Storage

Refrigerate the finished dish in shallow covered containers within 2 hours at 4 °C (40 °F) or below. Eat within 3 days of when the original leftovers were cooked; preparing a new dish does not reset this limit.

Make ahead

On Christmas night, refrigerate leftovers within 2 hours in shallow covered containers at 4 °C (40 °F) or below. Use within 3 days of the original cooking date; freeze dated portions for longer storage. Thaw in the refrigerator, never at room temperature.

Food safety

Discard leftovers held unrefrigerated for over 2 hours or with uncertain handling. Reheat previously cooked foods to 74 °C (165 °F) at the center only once; do not reheat again. Chill cooked rice promptly because of Bacillus cereus risk. Check allergens: gluten, milk, eggs, soy, plus possible cross-contact with nuts, fish or shellfish. When in doubt, discard.
