Ingredients

  • 480 g leftover roast beef, sliced into strips
  • 200 g fresh sliced mushrooms
  • 100 g chopped onion
  • 25 g butter
  • 45 g tomato paste
  • 20 g alcohol-free mustard
  • 250 ml cooking cream
  • 140 ml water or alcohol-free stock
  • 10 g chopped parsley
  • 3 g salt

Method

  1. Melt butter in a wide pan over medium heat.
  2. Soften onion for 3 minutes until translucent.
  3. Add mushrooms and cook for 5 minutes until their moisture evaporates.
  4. Stir tomato paste, mustard and water into the pan.
  5. Add roast beef and cook for 7 minutes, stirring, until it reaches 74 °C (165 °F) at its center.
  6. Add cream and warm gently for 3 minutes without a hard boil, until smooth and 74 °C (165 °F) at the center.
  7. Adjust salt, sprinkle parsley and serve immediately.

Presentation

Serve one generous ladle, about 200 g per person; enjoy immediately after preparation.

Suggested pairing

Swap in roast pork or turkey; without leftovers, fully cook fresh beef strips before adding sauce.

Storage

Keep the finished dish in a shallow covered container at 4 °C (40 °F) or below. Eat within 24 hours without exceeding 3 days from the original cooking of the leftovers. Do not reheat twice.

Make ahead

Within 2 hours of Christmas dinner, divide cooked leftovers into shallow covered containers and refrigerate at 4 °C (40 °F) or below. Use within 3 days of the original cooking; for later use, freeze promptly in dated, portioned containers. Thaw in the refrigerator, never on the counter. Reheat only the needed portion once.

Food safety

Discard perishable leftovers left unrefrigerated for over 2 hours (over 1 hour above 32 °C (90 °F)). Reheat previously cooked food to 74 °C (165 °F) at its center using a food thermometer, only once. Repurposing does not reset the storage clock. Check gluten, milk, egg and other allergens; when uncertain, discard. Promptly chill cooked rice due to Bacillus cereus risk.
