Ingredients

  • 380 g leftover roast pork, shredded
  • 480 g crusty bread loaf
  • 180 g shredded mozzarella
  • 120 g chopped seeded tomato
  • 70 g chopped onion
  • 20 ml olive oil
  • 80 ml water
  • 10 g chopped parsley

Method

  1. Preheat the oven to 190 °C (374 °F).
  2. Cut a lid from the loaf and remove some crumb, keeping the sides intact.
  3. Soften onion in oil for 3 minutes over medium heat until translucent.
  4. Add pork and water; heat 7 minutes until pork reaches 74 °C (165 °F) in the center.
  5. Mix tomato and parsley into the hot pork.
  6. Fill the loaf with pork and mozzarella.
  7. Bake for 12 minutes until cheese bubbles and the center reaches 74 °C (165 °F).
  8. Cut into 6 slices and serve hot.

Presentation

Serve 1 generous slice per person; enjoy immediately after preparation.

Suggested pairing

Try leftover chicken or roast beef; without leftovers, cook fresh pork fully and shred.

Storage

Keep the finished dish in a shallow covered container at 4 °C (40 °F) or below. Eat within 24 hours without exceeding 3 days from the original cooking of the leftovers. Do not reheat twice.

Make ahead

Within 2 hours of Christmas dinner, divide cooked leftovers into shallow covered containers and refrigerate at 4 °C (40 °F) or below. Use within 3 days of the original cooking; for later use, freeze promptly in dated, portioned containers. Thaw in the refrigerator, never on the counter. Reheat only the needed portion once.

Food safety

Discard perishable leftovers left unrefrigerated for over 2 hours (over 1 hour above 32 °C (90 °F)). Reheat previously cooked food to 74 °C (165 °F) at its center using a food thermometer, only once. Repurposing does not reset the storage clock. Check gluten, milk, egg and other allergens; when uncertain, discard. Promptly chill cooked rice due to Bacillus cereus risk.
