Ingredients

  • 350 g wheat flour for the dough
  • 200 ml lukewarm water for the dough
  • 5 g instant dry baker’s yeast
  • 8 g sugar for the dough
  • 6 g salt for the dough
  • 20 ml olive oil for the dough
  • 100 g thick tomato sauce
  • 210 g grated mozzarella
  • 2 g dried oregano

Method

  1. Mix the flour, yeast, sugar and salt in a bowl.
  2. Add the warm water and oil and knead for 8 minutes, until smooth.
  3. Cover and let rise for 40 minutes, until airy.
  4. Divide into 40 portions and shape into 5–6 cm discs, aiming for 20 to 25 g per raw topped mini pizza.
  5. Lightly prick the center of each disc with a fork, without piercing the rim.
  6. Par-bake the discs in a preheated 200 °C (400 °F) oven for 6 minutes, until the surface turns opaque without browning much.
  7. Spread the sauce over the discs and top with mozzarella and oregano.
  8. Bake at 200 °C (400 °F) for another 8 to 10 minutes, until the cheese melts and the rims turn golden.
  9. Serve hot without stacking the pizzas.

Presentation

Serve in one layer on a wide platter to keep the bases firm.

Suggested pairing

Olive oil or mild hot sauce on the side.

Storage

Keep baked pizzas sealed in the refrigerator at 4 °C (40 °F) or below for up to 2 days; reheat until hot throughout.

Make ahead

For best texture, freeze only the cooled par-baked bases, separated with food-safe paper and sealed, for up to 2 months. From frozen, add tomato sauce, mozzarella and oregano; bake at 200 °C (400 °F) for 10 to 14 minutes, until hot with melted cheese.

Food safety

Contains gluten and milk; contains no egg or fish. Keep cheese at 4 °C (40 °F) or below, refrigerate toppings promptly and handle the oven safely.
