Ingredients

  • 460 g wheat flour for the dough
  • 240 ml lukewarm whole milk for the dough
  • 7 g instant dry baker’s yeast
  • 22 g sugar for the dough
  • 7 g salt for the dough
  • 35 ml vegetable oil for the dough
  • 190 g chopped cooked ham
  • 190 g chopped mozzarella
  • 3 g dried oregano
  • 1 un egg yolk for brushing

Method

  1. Combine the flour, yeast and sugar in a bowl.
  2. Add the warm milk, oil and salt and knead for 10 minutes, until smooth and elastic.
  3. Cover the bowl so the dough does not dry out.
  4. Let rise for about 45 minutes, until nearly doubled.
  5. Mix the ham, mozzarella and oregano.
  6. Divide the dough into 48 equal portions and roll into small rectangles.
  7. Add filling and roll up each rectangle with its seam underneath; each raw roll should weigh about 20 to 25 g.
  8. Arrange on a tray with space between pieces and proof for 15 minutes.
  9. Brush with yolk and preheat the oven to 190 °C (375 °F).
  10. Bake for 18 to 22 minutes until risen and evenly golden brown.
  11. Transfer to a rack and cool slightly.
