Ingredients

  • 310 g wheat flour for the dough
  • 150 ml water for the dough
  • 20 ml vegetable oil for the dough
  • 1 un egg for the dough
  • 5 g salt for the dough
  • 10 ml white vinegar for the dough
  • 250 g small-diced mozzarella
  • 2 g dried oregano
  • 30 ml water for sealing
  • 1,500 ml vegetable oil for deep-frying

Method

  1. Combine the flour and salt in a bowl.
  2. Add the water, oil, egg and vinegar, mixing to form a dough.
  3. Knead for 8 minutes until smooth and elastic.
  4. Cover and rest for 30 minutes in a cool room.
  5. Mix the mozzarella with the oregano.
  6. Roll the dough roughly 1 mm thin and cut into 35 even rectangles for mini pastels weighing about 20–25 g.
  7. Portion the cheese, dampen the edges with the water, fold and crimp firmly with a fork, pressing out trapped air.
  8. Heat the oil in a deep pot to 175–180 °C (350 °F).
  9. Fry in small batches for 2–3 minutes, turning until golden and blistered; drain on a rack.

Presentation

Serve in an open basket or tray without stacking so they stay crisp.

Suggested pairing

Well-drained tomato vinaigrette or mild hot sauce.

Storage

After frying, refrigerate in a sealed container at 4 °C (40 °F) or below for up to 2 days; reheat in an oven to restore crispness.

Make ahead

Freeze raw, tightly sealed pastels apart on a tray for 2 hours; pack with separators at −18 °C (0 °F) or below for up to 2 months. Deep-fry straight from frozen at 170–175 °C (340–350 °F) in small batches for 3–4 minutes, until golden with melted cheese inside.

Food safety

Contains gluten, milk and egg. Keep cheese at 4 °C (40 °F) or below until assembly, seal carefully to prevent leaks, and never leave hot oil unattended.
