Ingredients

  • 250 g fine bulgur wheat for kibbeh
  • 400 ml hot water for soaking
  • 550 g lean ground beef
  • 120 g finely chopped onion
  • 15 g chopped fresh mint
  • 15 g chopped fresh parsley
  • 10 g salt
  • 3 g Middle Eastern allspice blend
  • 2 g ground black pepper
  • 1,500 ml vegetable oil for deep-frying

Method

  1. Cover the bulgur with the hot water and let it soak for 20 minutes.
  2. Drain and squeeze the bulgur very well to remove excess water.
  3. Mix the bulgur, beef, onion, mint, parsley, salt, spice blend and black pepper and knead for 5 minutes, until cohesive.
  4. Cover and refrigerate the mixture for 20 minutes to firm up.
  5. Divide the mixture into 50 portions of about 25 g each.
  6. Shape each portion into an elongated oval, tapering both ends slightly and compacting it well so it does not split.
  7. Heat the oil in a deep pot to 170–175 °C (340–350 °F).
  8. Fry a few kibbeh at a time for about 3 minutes, until deep golden brown and fully cooked in the center.
  9. Drain on a rack or paper towels and serve hot.

Presentation

Arrange in neat rows on a platter, with lemon wedges on the side so the crust stays crisp.

Suggested pairing

Lemon wedges, mint sauce or thick plain yogurt.

Storage

After frying, refrigerate in a sealed container at 4 °C (40 °F) or below for up to 2 days. Reheat in an oven or air fryer until piping hot in the center.

Make ahead

Shape the raw kibbeh, freeze in a single layer on a tray for about 2 hours, then pack tightly. Keep frozen for up to 3 months. Fry straight from frozen at 170 °C (340 °F) in small batches for about 5 minutes, until browned and fully cooked through.

Food safety

Ground beef must be fully cooked in the center. Contains gluten; the formula contains no milk, egg or fish. Keep beef at 4 °C (40 °F) or below and never leave hot frying oil unattended.
