Ingredients

  • 300 g day-old crusty white bread rolls (Brazilian pão francês) or baguette
  • 300 ml whole milk
  • 3 un eggs
  • 700 ml neutral vegetable oil
  • 250 ml strained orange juice
  • 100 g granulated sugar
  • 50 ml water
  • 4 g finely grated orange zest (no white pith)
  • 3 g ground cinnamon

Method

  1. Cut the bread into 12 slices about 2 cm thick.
  2. Beat the eggs until smooth.
  3. Add the orange juice, sugar and water to a small saucepan.
  4. Bring to a boil, stirring to dissolve the sugar.
  5. Simmer over medium-low heat for 10 to 12 minutes until lightly syrupy.
  6. Turn off the heat and add the orange zest.
  7. Stir cinnamon into the syrup.
  8. Heat the oil to 170–175 °C (340–350 °F) without smoking.
  9. Quickly dip each slice in milk and allow to drain.
  10. Dip each moistened slice in beaten eggs, letting excess drip off.
  11. Fry the first side for 90 seconds until golden.
  12. Turn and fry 90 seconds more until golden and the egg is cooked.
  13. Drain the slices on a rack or absorbent paper.
  14. Spoon a little orange syrup over each slice just before serving.

Make ahead

Use bread from the day before. Measure ingredients ahead, but keep milk and eggs chilled until cooking. Fry shortly before serving for the best texture.

Food safety

Use sound eggs; do not taste raw egg mixture. Cook until the center is set with no runny egg. Hot oil can burn: monitor its temperature and never leave it unattended. Allergens: gluten (wheat), milk and egg.
