Ingredients
- 300 g day-old crusty white bread rolls (Brazilian pão francês) or baguette
- 300 ml whole milk
- 200 g sweetened condensed milk

- 15 g unsalted butter
- 80 g granulated sugar
- 6 g ground cinnamon
Method
- Cut the bread into 12 slices about 2 cm thick.

- Coat each moistened slice in the beaten eggs.
- Arrange the slices on the tray and sprinkle with half of the cinnamon sugar.
- Bake at 200 °C (400 °F) for 10 minutes, until the underside begins to brown.
- Turn all the slices over.
- Bake for another 8 to 10 minutes, until the edges are golden and the surface is set.
- Finish with the remaining cinnamon sugar.
Presentation
Serve in a loose layer on a platter rather than tightly covered, so the baked surface stays drier.
Suggested pairing
Coffee, hot chocolate, or fresh citrus fruit.
Storage
Store in a covered container in the refrigerator at 4 °C or below for up to 2 days. Reheat in the oven to restore texture.
Make ahead
You can slice the bread and prepare the tray ahead. Mix the eggs and milk shortly before baking.
Food safety
Raw egg: bake until the center is fully hot with no wet egg. Hot oil: this version is not deep-fried; for any adaptation, never leave heating oil unattended. Allergens: gluten, milk, and egg.
