Ingredients

  • 360 g day-old crusty white bread rolls (Brazilian pão francês) or baguette
  • 180 g thick spreadable dulce de leche
  • 300 ml whole milk
  • 150 g sweetened condensed milk
  • 3 un eggs
  • 700 ml neutral vegetable oil
  • 70 g granulated sugar
  • 5 g ground cinnamon

Method

  1. Cut the bread into 12 thick slices, about 3 cm each.
  2. Cut a pocket into the side of each slice without cutting through.
  3. Fill each pocket with 15 g of thick dulce de leche.
  4. Gently press each opening closed.
  5. Mix the milk and sweetened condensed milk.
  6. Beat the eggs until combined.
  7. Mix the sugar and cinnamon.
  8. Heat the oil to 170–175 °C (340–350 °F) without letting it smoke.
  9. Briefly dip each stuffed slice into the milk mixture.
  10. Coat the slices in beaten egg, letting excess drip off.
  11. Fry the first side for 90 seconds until golden.
  12. Turn and fry 90 seconds more until hot and set in the middle, with no raw egg.
  13. Drain on a rack or absorbent paper.
  14. Coat the warm slices in cinnamon sugar.

Presentation

Arrange whole slices on a platter with a light cinnamon-sugar coating.

Suggested pairing

Black coffee or fresh fruit.

Storage

Refrigerate in a covered container at 4 °C or below for up to 2 days; keep topping separate where possible. Reheat thoroughly before serving. Do not leave at room temperature for over 2 hours.

Make ahead

Use bread from the day before. Measure ingredients ahead, but keep milk and eggs chilled until cooking. Fry shortly before serving for the best texture.

Food safety

Use sound eggs; do not taste raw egg mixture. Cook until the center is set with no runny egg. Hot oil can burn: monitor its temperature and never leave it unattended. Allergens: gluten (wheat), milk and egg.
